Esempi in frase interrogativa indiretta sono chiedi a tua moglie se è già pronta = ask your wife if she is ready yet, e mi domando se sono già arrivati = I wonder if they are there yet. I already spoke to him; hai già mangiato? = did you eat yet? (ma l'uso britannico standard prevede ancora "I've already spoken to him" e "have you eaten yet?")* * *già/dʒa/Ci sono tre modi principali per tradurre già in inglese: already, yet e before. = 10 o'clock already, we're late!; è inutile continuare, ha già vinto lui = there's no point in going on, he has already won; ne conoscevo già il significato = I already knew its meaning. 38 espagnole sauce
This is the foundation of all of the brown sauces. A number of modifications have been made of this sauce since its conception. The sauce is now made of a rich brown veal stock thickened with a brown roux. The sauce is then simmered with a mirepoix, bouquet garni, and wine. The long, slow cooking help to purify and concentrate its flavor. Finally, it is strained through very fine muslin. Demi-glace and glace de viande are all structured around a fine espagnole sauce. -
39 parboil
To boil food briefly in water, cooking it only partially. Parboiling is used for dense food like carrots and potatoes. After being parboiled, these foods can be added at the last minute to quicker-cooking ingredients. Parboiling insures that all ingredients will finish cooking at the same time. Since foods will continue to cook once they have been removed from the boiling water, they should be shocked in ice water briefly to preserve color and texture. Cooking can then be completed by sautéing or the parboiled vegetable can be added to simmering soups or stews. To boil until partially cooked; to blanch. Usually this procedure is followed by final cooking in a seasoned sauce.
