The OED indicates that it comes from Bromelia sylvestris and several species of agave, such as Agave ixtli. Santamaría glosses two related terms. He indicates that in Mexico iscle refers to the filament of the maguey plant before it has been rinsed. After the rinsing process, it is called pita. It is also the common name of several agave plants that produce the fiber, such as Agave rigida and A. endlichiana. Ixtle is a related Aztequism that has become a universal name for any vegetable fiber, especially the ones produced by plants of the genus Agave. By extension, it refers to several ropes made of such fiber used by charros. See also lechuguilla. -

(Sp. model spelled same [píta], of uncertain origin, probably from the Caribbean)1) Clark: 1760s. A fiber obtained from the agave or maguey plant or from another similar plant.2) A bag, box, rope, or net made from pita fiber. The DRAE glosses pita as a native Mexican perennial plant of the Amaryllidaceous family. Growing in a triangular pyramid, its light-green, fleshy, spiny leaves are about six to eight inches wide at the base and up to four-and-one-half feet long. It produces yellow flowers in bunches on a central stalk that does not develop until the plant is twenty or thirty years old. On reaching maturity, the stalk develops very quickly, growing to a height of twenty to twenty-three feet in a matter of days. The plant is very useful for making living fences in dry, hot regions. Although it originated in Mexico, it now grows naturally on the coasts of the Mediterranean. Its leaves produce a strong fiber and some varieties contain a sugary liquid that can be extracted to make pulque. The term pita is also used in Spanish to refer to the thread produced by the plant. Santamaría concurs with the definitions provided by the DRAE and adds that the most common genera to bear the name pita are Fourcraea and Agave. -

(Sp. model spelled same [púlke], apocopated form of Nahuatl poliuhqui-otli 'putrefied wine,' so named because of the strong smell of the drink and because of the process of allowing it to 'putrefy' or ferment in leather containers)Clark: 1830s. An intoxicating drink made from fermented agave sap. The DRAE describes it as a thick white drink from the Mexican highlands obtained by fermenting the juice extracted from the maguey plant with an acocote (a long calabash with perforations at both ends). Santamaría references it as a thick white, spiritous, and intoxicating drink with an unpleasant taste and nauseating properties. The drink is popular among the poorer classes on the Central Plateau and, along with chiles and tortillas, forms a principal source of nutrition. -

(Sp. model spelled same [puja], variant of púa < * püga, of uncertain origin, perhaps from an Italian dialect or from pre-Celtic Indo-European, and related to pungere 'to prick' and pügio 'dagger')Carlisle: 1913. Carlisle glosses this term as a thorn. The DRAE defines púa as a thorn and puya as a steel-plated point at the end of a rod or goad-stick that cowboys and picadors (in bullfights) use to goad or punish animals. Islas indicates that puya and púa are synonyms in Mexico and refer to a long sharp thorn found at the end of a maguey leaf. -

Santamaría describes it as the popular mezcal liquor whose production constitutes an important industry in the states of Jalisco and Guanajuato, Mexico. Its name comes from a city in the state of Jalisco, probably because the drink originated there. It is extracted from any of a number of agaves, but especially the Agave tequilana, which is also called the mezcal de Tequila, the mezcal azul, or the zapalote. The DRAE also references the drink as similar to gin.
