Fabada, así se llama a la comida o plato típico de Asturias, solamente en Asturias se puede hacer una buena y sabrosa fabada, lo mismo sucede con la sidra, ninguna de estas dos cosas se puede encontrar tan original y sabrosa como en mi Melgueira Tierrina. —Pa cheldar una bona fabada lu primeiru que hai que teñer les fabes de la granxa, ya istes fabes nun ñacen en dalgún oitre tarrenu namái qu'en miou Tierrina, puée qu'en oitres chugares recuétchan fabes mu apaixíes a les nuexes de la granxa, peru enxamás encaldaran el xabróusu xabor que les d'Asturies, ya lu mesmu xucéi con les mazanes, pos estes lu mesmu que les fabes de la granxa, ya mamplenáu de produtus cuaxi divinizantes que miou Asturies allumbra, nun ñacen mexores namái que nisti "Máxicu Xardín que son tous lus erus de la Melgueira Tierrina''. TRADUCCIÓN.—Para hacer una buena "fabada Asturiana", lo primero que hay que tener son las habas de la granja, y estas habas no nacen en ningún otro terreno nada más que en mi Tierrina, puede que en otras tierras recojan habas muy parecidas a las nuestras de la granja, pero jamás darán el sabrosísimo sabor que las de Asturias, y así lo mismo sucede con las manzanas, pues éstas lo mismo que sucede con las habas de la granja, y otros muchísimos productos que mi Tierrina allumbra, que no nacen tan buenos nada más que en este "Mágico Jardín, que son todos los lugares de mi Dulce y Encantadora Tierrina Asturiana". Las habas de la granja hay que trabajarlas bien, para que crezcan tan finas como la misma manteca, hay que bien abonarlas con estiércol puro, de lo que producen los animales de la casa, y no con las otras clases de abonos artificiales, pasa lo mismo que con nuestras Costumbres y demás Tradiciones Ancestrales, después hay que cocinarlas en una pota de hierro, con aguas puras de nuestras fuentes de nuestros ríos que no estén contaminadosbueno no vale cocinarlas en las ciudades con las aguas desinfectadas por el cloro, así como las carnes que llevan las habas tienen que ser de cerdo, criado con alimentos naturales, y así de esta manera, con morcillas, chorizo, jamón o lacón, se hace una "fabada" que es un manjar de los ángeles. Lo mismo la Fabada como la Sidra, son productos que no se pueden consumir fuera de nuestra Tierrina, ya que entrambos y dos pierden su natural sabor y encanto, esto no quiere decir que no sepan bien, pues yo me he emborrachado de sidra en Madrid, en Barcelona, etc., y me he hartado de fabada también en muchos lugares lejos de mi amada Asturias, y me han gustado tanto la sidra como la fabada, porque lo bueno siempre es bueno en todos los lugares, lo que yo pretendo decir es que todo lo que atañe a Nuestra Tierrina, tiene un misterio secular, que fuera de ella se desvanece en el gusto y se agranda en el cariñoso y respetuoso recuerdo.Primer Diccionario Enciclopédicu de la Llingua Asturiana > fabada
