       1) New Mexico: 1831. Another name for the agave plant. Also refers to the root or the young bud stalk of the plant used for food.
        Alternate forms: mascal, mescale, mezcal, muscal, muscale.
       2) California: 1833. An intoxicating drink prepared with the fermented juice or pulp of the agave plant. By extension, any intoxicating drink.
        Also called mescal liquor.
       3) Southwest: 1887. Another name for the peyote plant. See peyote.
       4) According to Blevins, this term also applies to a food prepared from mescal1. The DRAE references mezcal as a variety of agave or a liquor obtained by fermenting and distilling the heads of the plant. Santamaría defines mexcal (or mezcal) as an alcoholic drink extracted by distilling the fleshy leaf or the head of some species of maguey. He notes that the species used for making the drink are Agave mexicana, A. wixlinzeni, A. desipiens. The drink is popular in central and northern Mexico as well as in New Mexico and Texas.

       Referenced by Bentley as a "well, spring, or water hole." He notes that it may also refer to a machine that raises water from a well or cistern. Santamaría glosses it as a provincialism used in northern Mexico for a well or cistern. The DRAE defines it as a machine composed of two large wheels, a horizontal wheel that is moved by a lever pulled by a horse or mule, and a vertical wheel that is engaged in the first and moves a thick rope with buckets to draw water up from a well. The Royal Academy confirms that the term may refer to the well from which water is extracted by the machine described above.

    (Sp. model spelled same [píta], of uncertain origin, probably from the Caribbean)
       1) Clark: 1760s. A fiber obtained from the agave or maguey plant or from another similar plant.
       2) A bag, box, rope, or net made from pita fiber. The DRAE glosses pita as a native Mexican perennial plant of the Amaryllidaceous family. Growing in a triangular pyramid, its light-green, fleshy, spiny leaves are about six to eight inches wide at the base and up to four-and-one-half feet long. It produces yellow flowers in bunches on a central stalk that does not develop until the plant is twenty or thirty years old. On reaching maturity, the stalk develops very quickly, growing to a height of twenty to twenty-three feet in a matter of days. The plant is very useful for making living fences in dry, hot regions. Although it originated in Mexico, it now grows naturally on the coasts of the Mediterranean. Its leaves produce a strong fiber and some varieties contain a sugary liquid that can be extracted to make pulque. The term pita is also used in Spanish to refer to the thread produced by the plant. Santamaría concurs with the definitions provided by the DRAE and adds that the most common genera to bear the name pita are Fourcraea and Agave.

    (Sp. model spelled same [púlke], apocopated form of Nahuatl poliuhqui-otli 'putrefied wine,' so named because of the strong smell of the drink and because of the process of allowing it to 'putrefy' or ferment in leather containers)
       Clark: 1830s. An intoxicating drink made from fermented agave sap. The DRAE describes it as a thick white drink from the Mexican highlands obtained by fermenting the juice extracted from the maguey plant with an acocote (a long calabash with perforations at both ends). Santamaría references it as a thick white, spiritous, and intoxicating drink with an unpleasant taste and nauseating properties. The drink is popular among the poorer classes on the Central Plateau and, along with chiles and tortillas, forms a principal source of nutrition.
