вещества, задерживающие или полностью прекращающие окисление органических веществ и образование свободных радикалов (см. свободные радикалы). Различают А. природные (глутатион, витамины С и Е, кофермент Q, лимонная и молочная кислоты, природные фенольные соединения, хиноны, госсипол, кверцетин и другие растительные вещества) и синтетические (этоксихинолин, эфиры галловой и аскорбиновой кислот и др.). Природные А. осуществляют защиту организма от активных форм кислорода и др. радикалов. Они являются восстановителями, которые легко реагируют с окисляющими веществами и вследствие этого защищают более важные молекулы от окисления. А. применяются для стабилизации жировых веществ и др. легкоокисляющихся компонентов корма (каротина, ксантофила и др.), а также жиров животного и растительного происхождения; в технике используются для повышения устойчивости полимерных материалов (резин, пластмасс и др.) к действию кислорода.Толковый биотехнологический словарь.
