франц.метод шампенуаз, шампанский метод (традиционный метод производства шампанского, разработанный в провинции Шампань; процесс начинается со смешения спокойных сухих вин разных лет урожая или с разных участков для получения кюве (в отдельных случаях оно может состоять из 30-40 вин), состав кюве является как бы фундаментом стиля того или иного винного дома; затем в кюве добавляется т. н. "жидкость тиража" — специальная смесь из вина, сахара и дрожжей; после чего кюве немедленно бутилируется и затыкается пробками; внутри бутылок под воздействием дрожжей начинается вторичное брожение (добавленного сахара), в результате образуется некоторое количество алкоголя и углекислого газа, который и обуславливает "игристость" вин; если жидкости тиража в кюве добавлено немного, то получаются менее игристые вина, называемые "креман"; в процессе вторичной ферментации в бутылке образуется естественный осадок, который постепенно собирается у горлышка бутылки благодаря тому, что бутылки хранятся в положении горлышком вниз — начиная с 45 гр., затем угол наклона постепенно увеличивается (эта процедура называется ремюаж), и через 6-8 недель все бутылки стоят прямо "вниз головой"; после горлышко бутылки замораживают, погружая в специальный раствор, осадок затвердевает, пробка вынимается, и под давлением, образовавшемся внутри бутылки, "выскакивает" затвердевший осадок; перед тем, как снова укупорить бутылки, в них добавляют т. н. "экспедиционную жидкость", состоящую из сахара и вина, бутылки доливают этим же кюве (специально сохраненным для этой процедуры) и укупоривают пробками; от количества сахара в "экспедиционной жидкости" зависит, каким будет в результате вино — сухим, полусухим, полусладким или сладким; стандартное конечное давление в бутылке — примерно 6 атмосфер; слова "méthode champenoise" могут быть указаны на этикетке только тех вин, которые произведены по этому методу)See: -
