In the bodega (cellar) the casks are arranged in horizontal rows, with the bottom row, known as the solera, containing the oldest wine. исп.система "солера" (испанский метод выдержки крепленых вин ("Херес", "Марсала"): дубовые бочки, на 5/6 заполненные вином складывают друг на друга в форме пирамиды. Самый нижний ярус называется "солера" ("основание"), те, что выше, — "криадера" (ясли). В верхних бочках находятся самые молодые вина, в нижних — самые старые. Раз в год вино из нижнего яруса разливают по бутылкам, забирая не более одной трети бочки и восполняют объем за счет более молодого напитка из следующего яруса, и так далее до самой вершины. Бочки при этом не двигают - напиток переливают с помощью отводных шлангов, чтобы не повредить флор (пленку, образующуюся на поверхности вина). Таким образом вина различной выдержки смешиваются в процессе созревания, и благодаря этому качество, вкусовые и ароматические характеристики каждого конкретного хереса остаются стабильными и неизменными)See: -
