Aniseed-flavoured beverages have long been popular in France, particularly since the banning, for health reasons in 1915, of the popular and similar drink Absinthe. To this day, Pastis, of which there are two main brands, Pernod and Ricard, is still a very popular apéritif, particularly in the south of France. Pastis, which is a translucent amber colour when in the bottle, is generally diluted with about five parts of water, before being drunk.
