Ils descendent majoritairement des Acadiens qui furent contraints de quitter le Canada au XVIIIe siècle. La langue qu'ils parlent est un mélange de français du XIXe siècle, d'anglais, de créole et d'espagnol, mais elle disparaît peu à peu au profit de l'anglais. Pour préserver cette langue ainsi que la culture francophone de plus en plus soumise à l'américanisation, les écoliers cajuns qui le souhaitent ont la possibilité de suivre un enseignement bilingue.
