Recipe: Take some very fresh kumara, straight from the garden, if possible. Wash thoroughly, then grate. Place in a shallow baking dish and sprinkle with sugar. Over the top of the grated kumara place some broad slices of kumara. This will keep the mixture from hardening in the oven. Bake for an hour at 180C.
