Das mexikanische Nationalgetränk, wird aus dem Saft der blauen Maguey Agave hergestellt. Die langen und scharfen Blätter beinhalten eine Flüssigkeit, (aguamiel - Honigwasser) genannt, die zu Tequila vergoren wird. Lange bevor die Spanier das mexikanische Hochland erreichten, verstanden es die Indios, aus dem Agavensaft einen Schnaps herzustellen, der bei religiösen Ritualen und Zeremonien getrunken wurde. Das große Herz der Pflanze wird herausgelöst, die sich darin sammelnde Flüssigkeit vergoren und destilliert. Manchmal werden auch die Fruchtstücke der Agave zerkleinert, gekocht, ausgepresst und der Saft vergoren und ebenfalls destilliert. Nach der Destillierung kann der klare Tequila gleich getrunken werden. Im Bundesstaat Jalisco ziehen sich endlos die Agavenfelder und als Tequila bezeichnet man heute den aus dieser Region stammenden Agavenschnaps. Der Name ist keine Bezeichnung für eine Getränkesorte, sondern ein Markenname. Die Länge der Lagerzeit bestimmt die Qualität: Der junge weißliche Tequila wird nur ein paar Monate in Eichenfässern gelagert und eignet sich ausgezeichnet für Cocktails (Margarita, Tequila Sunrise). Ein im Eichenfass gereifter Tequila (reposado oder anejo), erkennbar an seinem goldener Schimmer und samtig weich, kann sich mit einem Cognac messen. Tequila hat in der Regel zwischen 40 und 45 Vol.-% Alkohol.
