Глагол to gather обозначает сведение некоторых предметов, людей из разных мест в одно; обычно это постепенный процесс:to gather fruit (harvest, a crowd) — собирать фрукты (урожай, толпу);
Clouds are gathering — Собираются тучи;

Глагол to collect обозначает собирание чего-либо по некоторому плану, в каком-либо порядке, с какой-либо целью и, как правило, из разных источников:to collect money for the victims of the earthquake — собирать деньги для пострадавших от землетрясения;

to pick berries (собирать, срывая по ягодке с куста),
to pick mushrooms (собирать гриб за грибом, отделяя их от грибницы).
