It is produced from the livers of geese or ducks, which have been force-fed ( gavés) with too much grain, before slaughter, in order to increase the size of the liver. The technique has been used for over 4000 years, but has recently been criticised on the grounds of animal cruelty, and a number of countries have banned the process. The fish is served separately from the broth, which is poured over garlic-rubbed toast, and seasoned with rouille which is stirred into the broth. Varied additions include boiled potatoes, orange peel, fennel, and shellfish. Expensive shellfish are often added in restaurant versions, but this practice is considered inauthentic. -
