Группа органических соединений; играют важную роль в тканях растений в качестве межклеточных веществ; расщепляются микроорганизмами с помощью пектолитических ферментов эстераз и деполимераз. Способность расщеплять пектины присуща многим грибам и бактериям. Патогенность различных микроорганизмов (Botrytis cinerea, Fusarium oxysporum и других) для растений зависит от выделения ими пектолитических ферментов. В почве численность микроорганизмов, разлагающих пектины, очень велика.

[греч. pektos — свернувшийся, сгущенный, замерший и лат. - in(e) — суффикс, обозначающий "подобный"]кислые полисахариды растений (см. полисахариды), построенные из остатков галактуроновой кислоты. П. являются компонентами первичных клеточных стенок растений, где находятся в комплексе с гемицеллюлозами (см. гемицеллюлозы) и целлюлозой (см. целлюлоза). Они играют важную роль в клеточном делении и росте молодых клеток, в поддержании водного и солевого баланса нелигнифицированных тканей, способствуют поддержанию в тканях тургора, повышают засухоустойчивость растений. В значительном количестве П. накапливаются в сочных плодах и др. запасающих органах растений. Ряд полисахаридов, по своей локализации в растении относимых к камедям или слизям, по химической природе являются типичными П. В растительных тканях П. могут находиться в виде нерастворимого протопектина, для разрушения которого при экстракции П. применяют кислоты или комплексообразователи, связывающие двухвалентные катионы. П. получают из лимонов, яблок, сахарной свеклы и др. Наиболее практически ценным свойством П. является их склонность к образованию гелей, обусловленная способностью участков молекул, построенных из остатков α-D-галактуроновой кислоты, к межмолекулярной ассоциации. П. обеспечивают устойчивость овощей и плодов при хранении; используются в пищевой и фармацевтической промышленности как желирующие вещества. Впервые очистил П. и дал им название Г.
