Эти два выражения были в постоянном употреблении с начала XVIII в. и имели в виду распухший нос служителя культа, частенько прикладывавшегося к бутылке. А если дать волю воображению, то зад ощипанного цыплёнка или индюшки вполне можно представить как нос заядлого пьяницы. -
