4 foie gras
( FRANCE)liver of a specially fattened goose or duck♦ This literally means goose liver, but the term is used to describe the fattened liver of both duck and geese. The birds are force fed a rich mixture to help expedite this process. These livers are praised for their delicate flavor and rich, buttery texture. The largest production of commercial foie gras is done in France and Israel. The US will only allow this product to be imported in a cooked stage, either canned, vacuum-sealed, or frozen. These are inferior products and will never highlight the true delicacy of foie gras. But fresh foie gras is now available from breeders in the US. These foie gras are very fine specimens, but a very high price goes along with them. Foie gras is prepared in a vast number of ways, though one should remember to keep these as simple as possible to avoid masking the flavor of this treasure.♦ the fattened liver of both duck and geese. 8 Martyn, Sir Richard
SUBJECT AREA: Metallurgy[br]b. 1543d. July 1617[br]English goldsmith, Warden and later Master of the Royal Mint, entrepreneur and shareholder in Elizabethan metal industries.[br]Martyn became a leading shareholder in the Company of Mineral and Battery Works, the Elizabethan monopoly established in 1565 under the initiative William Humfrey. Its purpose was to mine lead and zinc ores and to introduce production of brass and manufacture of brass wire to England, activities in which he took an active interest. Appointed Warden of the Royal Mint in 1572, Martyn's responsibilities included the receipt of bullion and dispatch of freshly minted coins. He reported unfavourably on a new invention for producing "milled" coins by a screw press which embossed the two faces simultaneously. Considerable friction arose from his criticism of the then Master of the Mint. He was later subject to criticism himself on the irregularity of coin weights produced at the Mint. In 1580 Martyn leased Tintern wireworks, property of the Mineral and Battery Company, which was by then producing iron wire after earlier failing in the production of brass. Two years later he sought rights from the company to mine the zinc ore calamine and to make brass. When this was granted in 1587, he formed a partnership with others including William Brode, a London goldsmith who had been experimenting with the making of brass. Production started on a small scale using imported copper at Queen's Mill, Isleworth, largely financed by Martyn. Brode soon disagreed with his partners and with the Mineral and Battery Works Company and Martyn withdrew. After long and acrimonious disputes the works closed completely in 1605.[br]Principal Honours and DistinctionsAlderman 1578. Knighted and appointed Lord Mayor of London 1589. Prime Warden of the Goldsmiths' Company 1592. Joint Master of the Mint with his son, Richard, 1599.Further ReadingM.B.Donald, 1961, Elizabethan Monopolies, London: Oliver \& Boyd (provides a comprehensive account).JD -
9 Momma (Mumma), Jacob
SUBJECT AREA: Metallurgy[br]b. early seventeenth century Germanyd. 1679 England[br]German (naturalized English) immigrant skilled in the manufacture and production of brass, who also mined and smelted copper.[br]The protestant Momma family were well known in Aachen, the seventeenth-century centre of German brass production. Subjected to religious pressures, some members of the family moved to nearby Stolberg, while others migrated to Sweden, starting brass manufacture there. Jacob travelled to England, establishing brassworks with two German partners at Esher in Surrey in 1649; theirs was the only such works in England to survive for more than a few years during the seventeenth century.Jacob, naturalized English by 1660, is often referred to in England as Mummer or another variant of his name. He became respected, serving as a juror, and was appointed a constable in 1661. During the 1660s Momma was engaged in mining copper at Ecton Hill, Staffordshire, where he was credited with introducing gunpowder to English mining technology. He smelted his ore at works nearby in an effort to secure copper supplies, but the whole project was brief and unprofitable. The alternative imported copper required for his brass came mainly from Sweden, its high cost proving a barrier to viable English brass production. In 1662 Momma petitioned Parliament for some form of assistance. A year later he pleaded further for higher tariffs against brass-wire imports as protection from the price manipulation of Swedish exporters. He sought support from the Society of Mineral and Battery Works, the Elizabethan monopoly (see Dockwra, William) claiming jurisdiction over the country's working of brass, but neither petition succeeded. Despite these problems with the high cost of copper supplies in England, Momma continued his business and is recorded as still paying hearth tax on his twenty brass furnaces up to 1664. Although these were abandoned before his death and he claimed to have lost £6,000 on his brassworks, his wire mills survived him for a few years under the management of his son.[br]Further ReadingJ.Morton, 1985, The rise of the modern copper and brass industry: 1690 to 1750, unpublished thesis: University of Birmingham, 16–25.J.Day, 1984, "The continental origins of Bristol Brass", Industrial Archaeology Review 8/1: 32–56.John Robey, 1969, "Ecton copper mines in the seventeenth century", Bulletin of the Peak District Mines Historic Society 4(2):145–55 (the most comprehensive published account).JD -

16 Wine
The Portuguese winemaking tradition goes back to Roman times, when Lusitania began exporting wine to the city of Rome. The modern wine-exporting industry began with the Methuen Treaty (1703), which stipulated that henceforth Portuguese wines would be favored as exports to Great Britain in the same way that British woolens imported to Portugal would have advantages. Portugal has the oldest appellation system in the world, which was established by the first minister of King José I, the Marquis of Pombal in 1758. In that year, Pombal ordered the demarcation of the wine producing region along the Douro River valley, the Região Demarcada do Douro, in order to assure the production of high quality port wines. During the reign of King Carlos I (1889-1908), the Vinho Verde, Dão, Colares, Carcavelos, Setúbal, and Madeira regions were demarcated, each of which has its own Comissão Vitivinicola to supervise the preparation and cultivation of the vineyards and to assure the quality of the wines produced.Portuguese wines are labeled Denominação de Origem Controlada (DOC), which indicates that the wine is of superior quality from a specific vineyard; Indicação de Pronveniência Regulamentada (IPR), which indicates that wines so labeled were produced under some regulations in a certain demarcated region but are not DOC wines; Vinho Regional, which indicates that such wine was produced without regulation within a specific demarcated region; and Vinho de Mesa, which indicates only that the wine was made in Portugal by a certain producer.Portugal produces some of the world's top wines, the best of which are port, madeira, dão, moscatel, and vinho verde. Portugal's most widely known wines are its lightly sparkling rosés, which were successfully mass-marketed in the United States and Europe by Mateus and Lancers beginning in the 1960s. These wines accounted for 40 percent of Portugal's total table wine exports in the 1980s. Increasingly, Portuguese wines are winning international recognition, which has increased their popularity among wine lovers the world over. -
17 Champion, William
SUBJECT AREA: Metallurgy[br]b. 1710 Bristol, Englandd. 1789 England[br]English metallurgist, the first to produce metallic zinc in England on an industrial scale.[br]William, the youngest of the three sons of Nehemiah Champion, stemmed from a West Country Quaker family long associated with the metal trades. His grandfather, also called Nehemiah, had been one of Abraham Darby's close Quaker friends when the brassworks at Baptist Mills was being established in 1702 and 1703. Nehemiah II took over the management of these works soon after Darby went to Coalbrookdale, and in 1719, as one of a group of Bristol copper smelters, he negotiated an agreement with Lord Falmouth to develop copper mines in the Redruth area in Cornwall. In 1723 he was granted a patent for a cementation brass-making process using finely granulated copper rather than the broken fragments of massive copper hitherto employed. In 1730 he returned to Bristol after a tour of European metallurgical centres, and he began to develop an industrial process for the manufacture of pure zinc ingots in England. Metallic zinc or spelter was then imported at great expense from the Far East, largely for the manufacture of copper alloys of golden colour used for cheap jewellery. The process William developed, after six years of experimentation, reduced zinc oxide with charcoal at temperatures well above the boiling point of zinc. The zinc vapour obtained was condensed rapidly to prevent reoxidation and finally collected under water. This process, patented in 1738, was operated in secret until 1766 when Watson described it in his Chemical Essays. After encountering much opposition from the Bristol merchants and zinc importers, William decided to establish his own integrated brassworks at Warmley, five meals east of Bristol. The Warmley plant began to produce in 1748 and expanded rapidly. By 1767, when Warmley employed about 2,000 men, women and children, more capital was needed, requiring a Royal Charter of Incorporation. A consortium of Champion's competitors opposed this and secured its refusal. After this defeat William lost the confidence of his fellow directors, who dismissed him. He was declared bankrupt in 1769 and his works were sold to the British Brass Company, which never operated Warmley at full capacity, although it produced zinc on that site until 1784.[br]Bibliography1723, British patent no. 454 (cementation brass-making process).1738, British patent no. 564 (zinc ingot production process).1767, British patent no. 867 (brass manufacture wing zinc blende).Further ReadingJ.Day, 1973, Bristol Brass: The History of the Industry, Newton Abbot: David \& Charles.A.Raistrick, 1970, Dynasty of Ironfounders: The Darbys and Coalbrookdale, Newton Abbot: David \& Charles.J.R.Harris, 1964, The Copper King, Liverpool University Press.ASD
