Они служат барьером между клетками и окружающей средой, являются резервуаром, выполняя протекторную роль против высушивания и предотвращая стрессы в экстремальных условиях; Э. выполняют роль саморегуляторов процессов роста и развития. Наиболее известный Э. — ксантан, который используется в качестве добавки, улучшающей качество самых различных продуктов, а также в разнообразных технологических операциях (повышение нефтедобычи, буровые работы, повышение урожайности, в пищевой, фармацевтической и косметической промышленностях и т.д.).Толковый биотехнологический словарь.
