Amagostón. ¿Qué asturiano no se ha comido alguna vez en su vida en amigable, alegre y feliz compañía un amagostón de buenas castañas regadinas con xidre (sidra)? Yo me he zampado en mi vida miles de amagostones, los he comido por necesidad, por hambre, que es cuando verdaderamente se sabe el grande valor que tienen todas las cosas. En tiempos de las castañas, llegaba a los castañéus y fuesen de quién fuesen, si el amo no los llindiaba (cuidaba) yo me enfardaba (llenaba) de las mejores castañas, que luego colaba conechas (marchaba con ellas) a los pastos comunales, aú arrexuntaba fuéas, felechus, murgazus (donde rejuntaba hojarascas, helechos, malezas), atreinandu 'n balagarín (haciendo un montonín) y por d'enría d'él semaba les castañes, ya chuéu llantandoi fuéu, esgalazáu ya felliz aguardaba qu'amagostaren aqueches castañines que diben allegrar el miou ventronín ameruxadín de fame. Ya despós de fartuquín, alcuérdume qu'allugábame con fuercia la sede, y'entóus colaba a gálamus fasta lus fontanus ou fontiquines, ya d'enría sous cristiallines agues apoúxaba lus mious focicus ya non lus xebraba fasta que nun me fartare. (Y por encima de él, sembraba las castañas, y luego le prendía fuego y ansioso y feliz esperaba que asasen aquellas castañinas que iban alegrar mi pequeño estómago lleno de hambre. Y después de hartarme, recuerdo que me atenazaba con fuerza la sed y entonces me marchaba corriendo hasta las fuentes y encima de sus cristalinas aguas posaba mis hocicos y no los apartaba hasta que de nuevo no me hartase). ¡Toda mi infancia y juventud la he vivido siempre al lado de la sabía y hermosa Naturaleza, inagotable fuente de sapiencias que al hombre que la quiere le está ilustrando hasta que ELLA misma su vida quiere! Las mejores castañas para hacer un buen amagostón son las llamadas castañas de cuerra, por estar más bravas y hechas, ya que han permanecido en las cuerras, situadas en los mismos castañéus, hasta que los arizos se pudran, que suelen tardar un par de meses, depende cómo venga el tiempo, y una vez que los arizos ya están podridos, es cuando se hace «l'esbítcha», que consiste en sacar las castañas de dentro de los arizos mayandu (majando) éstos en la ariceira (campera destinada a majar los arizos) y allí mismo, al lado de l'ariceira se hace el primer amagostón de castañas cabantes d'esbítchare (que en el momento fueron esbilladas), por regla natural se suelen hacer estos amagostones con el murgazu (maleza) que cabría los arizos en la cuerra, se amontona en una pila, se vierten las castañas por encima, se le pega fuego y se espera a que se queme todo el balagarín de murgazu (montón de malezas) y al tenor que el fuego va consumiendo las malezas, las castañas al ir asándose algunas de ellas explotan con fuerza y saltan de la pila envueltas en chispas ante la alegría y el regocijo de los más pequeños que acorralan el amagüestu, y cuando ya no queda nada más que las humeantes cenizas, haciendo de abanico bien con la chaqueta, con un saco o con lo que sea, se quitan las cenizas que cubren las amagostadines castañas, que quedan reunidas en el quemado campizo, todas muy sabrosas y bien asadas. Después, mujeres, niños y hombres que están haciendo la faena de l'esbítcha, muy contentos y ceremoniosamente se sientan al lado del magüesto, y entre sonrisas, bromas y regocijos, todos simples, sencillos y naturales, se come el primer amagostón de l'esbítcha. Después de recogidas todas las castañas de l'esbítcha, se meten en sacos o a granel en las goxas, o dentro de la esquirpia, (cesta enorme y alargada con capacidad de cuatro goxas) y se bajan en los rametus, ou corcetas (rastros), hasta la teixá (casa) y allí s'escuétchen (escojen), las más grandes se apartan para ponerlas en maurera (madurera), arriba en el xomeráu (desván), bien tapadas con fués (hojas) de castañal, que son las que mejor faen (hacen) que las castañas no se amayuquen (se pongan duras). Las más pequeñas se meten en el xardu, para que les fumaireres (humaradas) del char faígayas en mayuques. (Del lar las haga duras). Y el malucu (las malas, por mal criadas, o algo podres), sirven para dar piensos al pótchin del trabayu (el burro de trabajo), o d'angún oitre anemal qu’enxuma mái lu ñecexite. (O de alguno de los otros animales que en suma más lo necesite). Lus amagostones yeren nes mious amantines aldines nus tiempus d'endenantes, cundu you yera un guaxín, dalgu entrañable ya xenciétchu, de lu que xuergaba tou la familia, ya vecinus que con allegría esmianaben les callentines y'amagostaines castañes, axontáus nus escanus trés el llar, al mor del callorcín que nus ufrendiaba 'l pá fuéu, enes tardis fríes ya ñeváes, ou nes llargues veladiétches de lus enxenebráus envernus. Unde trés un bon amagostón regaín con tarreñaines de xidre ou vinu, que faia que l'allegría hermenare a les xentes, ya les chingües se fixeren llixeres nus falares de fatáus d'allegres ya mu xeríes couxes, qu’arrabucaben chárimes ou xonrises nus xentimientus de tous lus qu'ureaben, metantu 'l pá fuéu chispotiaba, ya 'l guetu endubiétchau baxu 'l escanu ñeváu pe les povixes, deixara de llindiar a lus mures, perque mu felliz ya callentrín xuañara.
