коммер.пептидный антибиотик (лантибиотик), бактериоцин, образуемый микроорганизмом Streptococcus lactis. Полипептидная цепь Н. включает 34 аминокислотных остатка, в том числе такие, которые не встречаются в природных белках и появляются в результате посттрансляционной модификации (остаток лантионина, метиллантионина, дегидроаланин и др.); может полимеризоваться и образовывать димер (молекулярная масса 7 кДа) и тетрамер. Н. подавляет in vitro множество грамположительных бактерий (стафилококки, стрептококки и др.), ряд кислотоустойчивых бактерий (напр., М. tuberculosis), не оказывает влияния на грамотрицательные бактерии, дрожжи и плесневые грибы. Противомикробная активность Н. обусловлена высокой реакционной способностью остатков непредельных аминокислот, которые взаимодействуют с SH-группами ферментов. В структурном отношении Н. близок ряду пептидных антибиотиков (субтилину, циннамицину, эпидермину и дюрамицину). Препараты Н. используют в качестве пищевого консерванта, а также для защиты животных от инфекций. В настоящее время Н. получают из продукта ферментации молока бактерией Streptococcus lactis с помощью фермента NisC, который сходен с фарнезилтрансферазами млекопитающих. Впервые описан в 1928 г. Л.
