В тех случаях, когда имеются в виду отдельные представители класса или группы, возможно употребление существительного с предлогом of (следующего за kind и sort) во множественном числе: this sort of apples, that kind of tubes (предшествующее указательное местоимение и в этом случае обычно имеет форму единственного числа, хотя в современном языке наблюдаются нарушения этой нормы: these kind of books).
